  • even-sized potatoes

Directions

Use old potatoes that are known to be of a floury consistency when boiled. Scrub clean and pick out any nasty blemishes. Prick all over a few times with a skewer and rub with buttery hands to give a light coating. Put in a moderate oven directly on to a rack spaced evenly. Medium sized potatoes will take about an hour to cook. You can tell by squeezing them. The skins should be crisp and a good golden colour and the flesh soft when squeezed. Cut a cross in the top and with thumbs and forefingers of both hands press to open the cross and allow the flesh to pop out a bit. Put a blob of sour cream on and finish with chopped chives or paprika. Baked potatoes can be cut in half, scooped out, mashed with parsley, butter, celery, onion - lots of things and piled back in. Top with grated cheese and reheat in oven. Or - you can scoop out the cooked potatoes and use for croquettes and cut the skins into smaller pieces, top with bacon, onion, cheese etc. and grill for tasty snacks.
