Chicken Fricassee and Dumplings Recipe

Ingredients:

  • 2 chickens
  • Salt
  • Pepper
  • Ginger
  • Water
  • 1/2 cup onions
  • 1/2 cup carrots
  • 1/2 cup celery
  • 1 bay leaf
  • 4 tablespoons chicken fat or butter
  • 4 tablespoons flour
  • 2 egg yolks, beaten
  • 2 tablespoons minced parsley
  • 1 can mushrooms
  • Baking Powder Dumplings
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 2 eggs, well beaten
  • Milk

Directions:
Cut chicken into pieces for serving; sprinkle with salt, pepper and a few grains of ginger. Cover with water and cook slowly for 1 hour. Add the vegetables and bay leaf and continue cooking until chicken is tender. Blend flour and melted chicken fat or butter. Gradually add about 3 cups of the hot chicken broth; season and cook until smooth. Pour onto the beaten yolks; add mushrooms and parsley and pour over chicken.

Serves 6.
