Directions:
Cut chicken into pieces for serving; sprinkle with salt, pepper and a few grains of ginger. Cover with water and cook slowly for 1 hour. Add the vegetables and bay leaf and continue cooking until chicken is tender. Blend flour and melted chicken fat or butter. Gradually add about 3 cups of the hot chicken broth; season and cook until smooth. Pour onto the beaten yolks; add mushrooms and parsley and pour over chicken. Serves 6.
