Apple Cinnamon Crisps

Ingredients

• 1 pkg apple cinnamon cake mix (spice cake mix will work well)
• 1/2 cup cooking oil
• 2 eggs
• 1 tbsp sugar
• 1 tsp cinnamon

Directions

Preheat oven to 375. Blend dry cake mix, oil and eggs. Drop from a teaspoon about 2 inches apart on an ungreased cookie sheet. Combine sugar and cinnamon. Dip the bottom os a glass in this mixture and press a cookie flat. Repeat for each cookie. Bake at 375 for 8-10 minute until medium brown. Cool on cookie sheet about 1 minute then remove to racks to finish cooling. Store tightly covered.
