Key Lime Pie Recipe

Ingredients:

  • 9" baked pie shell
  • 2 egg yolks, lightly beaten
  • 1-14 ounce can sweetened condensed milk
  • 1/2 cup fresh lime juice
  • 1 cup heavy cream
  • 2 tablespoons confectioners' sugar, sifted

Directions:
Beat egg yolks with condensed milk just until blended. Add lime juice and beat until mixture thickens slightly. Pour into baked and cooled pie shell. Refrigerate until well chilled. Whip cream until very stiff. Fold in sugar. Spread over pie filling. Make sure whipped cream touches pastry all around. Return to refrigerator and chiill several hours, or overnight before serving.
