Ingredients
- 2 1/2 lbs. Boiling Potatoes, peeled, boiled and cooled
- 4-5 Hard-Boiled Eggs
- 1 cup Hellman's Mayonnaise
- 1/4 cup Tarragon Vinegar (or substitute what you have)
- 1 lg. Carrot, Shredded
- 1 tsp. Onion Powder
- 3 Chopped Scallions
- salt and pepper
Directions
Mash two of the hard-boiled eggs to incorporate into salad. Reserve the remaining eggs to slice on top of salad. Combine all ingredients. Garnish with Egg Slices.
