Ingredients

  • 2 1/2 lbs. Boiling Potatoes, peeled, boiled and cooled
  • 4-5 Hard-Boiled Eggs
  • 1 cup Hellman's Mayonnaise
  • 1/4 cup Tarragon Vinegar (or substitute what you have)
  • 1 lg. Carrot, Shredded
  • 1 tsp. Onion Powder
  • 3 Chopped Scallions
  • salt and pepper

Directions

Mash two of the hard-boiled eggs to incorporate into salad. Reserve the remaining eggs to slice on top of salad. Combine all ingredients. Garnish with Egg Slices.
