Ingredients

  • 4 oz. cream cheese
  • 1/4 cup milk
  • 1/2 cup mayonnaise
  • 1/4 cup diced onion
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 1/4 cup chopped black olives(or green)
  • 1/4 cup chopped smokey-link sausages (or bacon)
  • 4 oz. grated Swisss cheese

Directions

In top of double boiler combine cream cheese, milk, mayonnaise, onion and salt. Stir constantly unitl cheese has melted and ingredients are well mixed and creamy. Remove from heat and allow to cool slightly. Add some of the hot cream-cheese mixture to the beaten eggs, stirring constantly; then add egg mixture to remaining cream-cheese mixture, stirring constantly. Add olives, sausage, and Swiss cheese; mix well. Coat a tart pan with vegetable cooking spray. Fill each tart cup just to the top with quiche mixture. Bake at 350 degrees F. for 18 to 20 minutes or until quiches rise and are golden brown. Let cool slightly in pan; remove from pan and cool completely on wire rack. To serve: reheat in preheated 275 degree F. oven or in frying pan. Yield: 24-30 crustless quiches.

Note: Muffin or pie pans may be substituted if larger quiches are desired. Your favorite ingredients may be substituted for the black olives and sausages, for example shrimp, bacon, green olives.
