Chocolate Mousse Recipe

Ingredients:

  • 8 ounces semisweet chocolate chips
  • 2 tablespoons water
  • 1/4 cup superfine sugar
  • 1/2 cup unsalted butter
  • 6 eggs, separated
  • 1 tablespoon dark rum
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons sugar
  • Whipped cream for garnish, optional

Directions:
1. Place chocolate and water in top of double boiler over hot water; heat until chocolate melts. Stir in sugar. Add butter a tablespoon at a time; mix well until butter is melted. Remove from heat.

2. Beat egg yolks in bowl until thick and lemon-colored, about 5 minutes. Gently fold chocolate mixture into egg yolks; reheat slightly to melt chocolate, if necessary. Stir in rum and vanilla.

3. Beat egg whites in separate bowl until foamy. Beat in sugar until stiff peaks form. Gently fold egg white mixture into chocolate mixture. Pour into individual serving dishes; refrigerate for at least 4 hours. Serve with whipped cream, if desired.
