This is the real thing, my father in law is from England. It is nice that you make it ahead, then you can have everything ready.

Ingredients

  • 2 eggs
  • 1/2 tsp salt
  • 1 cup all purpose flour
  • 1 cup milk
  • 2 Tbsp. roast beef drippings

Directions

Combine eggs, salt, milk and flour in blender and blend at high speed for 2 or 3 seconds. Turn off the machine, scrape down sides of blender and blend again for 40 seconds. (Refrigerate for at least one hour).

Preheat oven to 400 F. In a 10x15x2 1/2 inch roasting pan heat the fat over a moderate heat until it splutters. Briefly beat the batter again and pour into pan. Bake in the middle of the oven for 15 minutes, reduce heat and bake for 15 minutes longer, or until the pudding has risen over the top of the pan and is crispy and brown. With a sharp knife, divide the pudding into portions and serve immediately.
