Ingredients
- 3/4 cup (1 1/2 sticks) buttter,melted
- 1 1/2 cups buttermilk
- 3 cups flour
- 3 cups finely-ground rolled oats
- 1 tsp. baking soda
- 1 tsp. salt
Directions
Preheat oven to 375 degrees. Lightly grease four 11-by-17-inch cookie sheets. In a large bowl, stir together the melted butter and the buttermilk.Add the remaining ingredients to make a stiff, sticky dough. Let it stand for 10 minutes(the dough will become less sticky). divide into four parts and place one part on each cookie sheet. Using either a regular rolling pin, or one made especially for hardtack, roll the dough out to the edges of the cookie sheets. (It will be very thin).Trim the edges and score the dough into 2-by4-inch pieces. If you are using a plain rolling pin, pierce the dough all over with a fork. If you are using a hobnailed hardtack rolling pin, you do not need to pierce the dough. Bake for 20 to 25 minutes, until golden and crisp.
