• 3 1/2 c flour
  • 2 t baking soda
  • 1 1/2 t cinnamon
  • 1/2 t salt
  • 1/2 t nutmeg
  • 2 eggs, beaten
  • 1 c mayonnaise
  • 1 jar(16 oz.) unsweetened applesauce
  • 1 c sugar
  • 1 1/2 t vanilla
  • 1 c chopped walnuts
  • Cinnamon Icing:
  • 1 pkg.(8 oz.) cream cheese, softened
  • 1/4 c melted butter
  • 1 box(16 oz.) confectioners' sugar, sifted
  • 1 t cinnamon


Heat oven to 350 degrees. Grease two 8-inch layer cake pans. Sift together flour, baking soda, cinnamon, salt and nutmeg. Beat eggs, mayonnaise, applesauce, sugar and vanilla in large bowl until smooth, about 1 minute. Stir in nuts. Divide evenly between prepared cake pans. Bake until wooden pick comes out clean, about 30 minutes.Cool on wire rack 10 minutes. Remove from pans. Cool completely on wire racks. Fill and frost layers with cinnamon icing. Makes one 8-inch layer cake.

For Icing; Beat cream cheese and butter until fluffy. Slowly add sugar, beating until smooth and a spreading consistency. Add cinnamon; beat until blended
