Ingredients:

  • 1 Med. White Potato
  • 2 Lbs. 4x Powdered Sugar
  • 2/3 Cup Smooth Peanutbutter

Directions:
Peal and boil the potato until it is completely cooked, remove it from the water and let it drain just a minute. While it is still warm, pour the sugar into a med. Sized bowl put the potato in the center and begin to mash and mix the potato into the sugar with your very clean fingers......

You will see just how much of the sugar you will need as you work, this is never the same because the size of the potato varies and the water content varies also..

When the mixture is the consistency of clay it is perfect. Now roll this out on a lightly sugared surfact to the thickness of about 1/2 inch. Spread the peanut butter onto this and roll it up jelly roll fashion.

Rap tightly in plastic wrap and refrigerate until completely cool. Cut with a clean thin bladed knife about 1/2" inch thick.

Keep refrigerated and wraped well until they are all eaten which won't be long..



This is a great Christmas snack.
