Ingredients

  • Sunflower or corn oil for frying
  • Approximately 3 cups yellow cornmeal
  • 1 tbs. black pepper
  • 1 tsp. salt
  • 6 dozen medium oysters (more if very smqll), shucked and drained

Directions

Put the oil in a deep fryer with a wire basket and heat to very hot. If you have a frying thermometer, the temperature should be 375 degrees. While the oil is heating, mix the cornmeal, pepper, and salt on a long sheet of waxed paper, placed next to the stove if possiable. Drain the oysters and roll in the mixture, coating well. Put the coated oysters in a single layer in the wire basket and lover it into the hot oil. Fry a batch at a time this way for about 2 minutes, until golden. Continue until all are fried. Keep the oysters warm on paper towels in the oven (in one layer) until you finish them all. Serve immediately on a warm platter. Let oil reheat for a few seconds between batches.
