Ingredients:

  • 1 3/4 cups flour
  • 1 egg, beaten
  • 1/2 cup water
  • 3 teaspoons salt
  • 2 scallions, finely chopped
  • 1/2 cup canned bamboo shoots, drained and finely chopped
  • 1/4 lb. boneless pork, finely chopped
  • 1/4 lb. boneless chicken breast, finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon sake(rice wine) or dry sherry
  • 1/8 teaspoon pepper
  • 1 egg white, beaten with 1 tablespoon water
  • 3 quarts water
  • 4 cups chicken broth
  • 1/4 cup chopped watercress

Directions:
Sift flour into mixing bowl. Add egg, water, and 1 teaspoon salt; mix to form dough. Knead dough until smooth, then cover and set aside to rest for 1 hour. Mix half the scallions, bamboo shoots, pork, chicken, soy sauce, sake, and pepper together well to form smooth filling. Roll dough out thinly onto floured board and cut out circles 3 inches in diameter. Place filling in center of each circle. Paint edges of each circle with egg white mixture. Fold each circle in half, and press edges together with fork. Bring water and 2 teaspoons salt to boil in large pot. Add wontons and cook for 5 minutes. Remove wontons from pot, drain in colander, and set aside. Heat chicken broth in large saucepan. Divide wontons and remaining scallions among 6 soup bowls. Pour chicken stock on top, and garnish with watercress.
