Carrot-Raisin Salad Recipe

Ingredients:

  • 2 cups finely shredded carrots(3 to 4 medium)
  • 1/3 cup raisins
  • 1 Tablespoon snipped chives
  • 1/4 teaspoon salt
  • Cooked Salad Dressing or mayonnaise

Directions:
Combine carrots, raisins, chives and salt in a bowl. Add just enough salad dressing to moisten the ingredients and toss lightly. Can serve in lettuce cups garnished with parsley. 4 or 5 servings.



Use your blender to chop the carrots. Cut them into 1/2-inch slices. Place half the carrot slices in blender and add just enough water to cover carrots. Cover and follow manufacturer's instructions or run just long enough to finely chop carrots(3 to 5 seconds). Empty carrots into a strainer and drain thoroughly. Repeat with remaining carrots.
