Ingredients:

  • 2 tbsp. butter
  • 2 cubed lamb, shoulder or leg
  • 1 onion, sliced
  • 3 cloves garlic, finely chopped
  • 2 cups water (or beef stock)
  • 1 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 6-8 medium potatoes, quartered
  • 3-4 carrots, cut horizontally into 2"" pieces (optional, as this is not true Irish tradition, I've heard

Directions:
Brown lamb slowly in butter. Add onion and garlic and saute for 5 minutes. Add water or stock, salt and pepper, cover and cook for 15 minutes. Add potatoes and carrots (I like the flavor that the carrots add). Cook 45 minutes.



I like to thicken the gravy a bit with some cornstarch mixed in water.
