Directions:
Remove most of fat from brisket. Wahs and dry. sprinkle with salt and pepper. Place meat fat side up in heavy casserole. Cover with onion, celery, chili sauce, water and parsley. Bake uncovered in 325 oven for 1 hour. Pour beer over and bake, covered, for 3 more hours or until tender. Cool to room temperature, refrigerate, skim off fat, slice and reheat in sauce.
