This is an old recipe I had in my files. I have no idea where it came from except that it was clipped from a magazine. I haven't made it for at least 20 years, glad you reminded me of it.

Ingredients

  • 1 large orange
  • 1 cup seedless raisins
  • 1/3 cup walnuts
  • 2 cups sifted flour
  • 1 cup sugar
  • 1 t. salt
  • 1 t. soda
  • 1/2 cup shortening
  • 1 cup milk, divided
  • 2 eggs
  • TOPPING:
  • 1/3 cup orange juice
  • 1/4 cup chopped walnuts
  • 1/3 cup sugar
  • 1 t. cinnamon

Directions

Squeeze orange; reserve juice. Grind pulp and rind of orange together with raisins and walnuts, using coarse blade of food chopper. Set aside. Combine flour, sugar, soda and salt in large bowl of mixer. Add shortening and 3/4 cup of the milk. Beat on low speed for 1 1/2 minutes, scraping down sides of bowl. Add eggs and remaining 1/4 cup milk. Beat 1 1/2 minutes longer, scraping down sides of bowl. Fold in orange-raisin mixture. Turn into 13x9x2 or 9-inch square pan which has been well-greased and lightly floured on bottom, only. Bake in 350< preheated oven for 40 to 50 minutes, or until done. Remove from oven and let stand about 10 minutes. Turn out on rack to cool. While it is still warm, drizzle orange juice over top of cake. Sprinkle with nuts, then with sugar and cinnamon which have been mixed together.
