I did not like the maple cookies, so I substituted vanilla extract and got RAVE reviews for this cookie. Also, I shrink-wrapped my cookies as follows: Line a baking sheet with paper towels; put in a 325 degree oven. Wrap each cookie firmly in plastic wrap, taping the back if necessary. Place cookies slightly apart on a warm baking sheet without removing it from the oven; heat oven for about 2 minutes or until plastic shrinks tightly over cookies. Remove from oven and let cool.

Ingredients

  • COOKIES
  • 1 Cup butter or Marj softenen
  • 3 pkgs (3 oz each) cream cheese, softened
  • 2 eggs, beaten
  • 1t maple extract
  • 3 Cups all-purpose flour
  • 2 t baking powder
  • 1 C granulated sugar
  • 1/4 t. salt
  • ICING
  • 4 C confectioners sugar
  • 6 T milk
  • Red and gree paste food coloring.
  • Purchased white decorator icing

Directions

For cookies, beat butter and cream cheese in a large bowl until smooth. Mix in eggs and maple extract. In another large bowl, sift together next 4 ingredients. Blend flour mixture into butter mixture. Cover and chill at least one hour.

Preheat oven to 375 degrees. On a lightly floured surface, use a floured rolling pin to roll out dough to 1/4 inch thickness. Use a triangle pattern (recipe comes with a pattern with a triangle with a 3-1/2 " base and 4-1/2 " sides, but you can use any size that suits your needs). Place paper pattern on dough and use a sharp knife to cut around pattern. Transfer cookies to greased baking sheet. Bake 10-12 minutes or until light brown.

For icing, beat sugar and milk together in a large bowl. Divide icing in half. tint red and green. Spread icing on cookies for coat and hat. Use decorator icing to decorate cookies (beard, fur on hat, buttons).


Yield: about 3 dozen cookies.
