Ingredients

  • 12 ounces macaroni
  • 1/4 cup butter
  • 3 tablespoons flour
  • 2 1/4 cups milk
  • 3 eggs beaten
  • Pinch of freshly ground white pepper
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped Pecorino or Parmesan cheese

Directions

1. Cook macaroni in boiling, salted water until just tender, following package directions; drain.

2. Melt butter in saucepan. Add flour and saute, stirring constantly, until light yellow. Gradually stir in milk; simmer, stirring constantly, for 10 minutes. Remove from heat.

3. Preheat oven to 400 degrees.

4. Mix eggs and pepper together; stir into cooled sauce. Cover bottom of buttered ovenproof dish with sauce. Place pasta on top. Sprinkle with walnuts. Cover with remaining sauce and cheese. Bake for 30 minutes, or until golden brown. Remove from oven, and serve.
