Cornish Pasties Recipe

  Scottish Pies

    




Ingredients:
1 lb boneless sirloin, cut into 1/2" cubes
3 medium potatoes, chopped
1 medium onion, chopped
2 medium carrots, chopped
1/4 c. water
3/4 tsp salt
1/4 tsp pepper
Pastry
3 c. flour
1 1/2 tsp salt
1 c. shortening
1/2 cup plus 2 tbsp cold water
1 egg, beaten
1 tsp water

Directions:
Combine flour and salt in bowl; cut in shortening with pastry blender until mixture resembles coarse meal. Sprinkle cold water, 1 tbsp at a time, evenly over surface; stir with a form until moistened. Divide into 8 equal portions; roll out into a 6 1/2" circle.

Mix first 7 ingredients together and spoon 1/2 c. mixture on center of each circle. Beat together egg and water; brush edges of circles with beaten egg, makinig a 3/4" border. Gently lift sides of circle to meet at the top. Firmly press edges together; flute. Place on ungreased baking sheets; bake at 350 for 1 hour or until lightly browned.

Serves 8.
