White Bean with Bacon Soup Recipe

Ingredients:
7 cups water
1 pound dried white beans
1 onion, chopped
1/2 pound pancetta bacon *
salt and pepper

* this is a spicy Italian bacon. Regular bacon can be substituted, but is not as good.

Directions:
Place water and beans in a large pot and bring to a boil. Boil for two minutes, then remove from heat. Cover and let stand for about an hour.

Cook, drain, and crumble bacon.

Add bacon and onion to beans; add salt and pepper to taste. Return to heat and cook until beans are tender, about an hour and a half.
