Ingredients
- 2 cups small curd cottage cheese
- 2/3 cup whipping cream
- 2/3 cup sugar
- 2/3 cup all-purpose flour
- 1/4 teaspoon salt
- 1 egg, slightly beaten
- 1 egg yolk, slightly beaten
- 1 tablespoon corn syrup
- 1 tablespoon melted butter
- Pre-baked 9-inch pastry shell
- Lemon or orange slices, optional
Directions
Using a blender, food processor or mixer, process or beat the cottage cheese till nearly smooth. Stir in the whipping cream. Set aside.
In a large mixing bowl, combine the sugar, flour and salt. Stir in the egg and egg yolk, corn syrup and melted butter. Stir in the cottage cheese mixture.
Pour filling into the baked pastry shell. Bake in a 350 degrees oven for 45 to 50 minutes or till a knife inserted near center comes out clean. Cool pie on a wire rack.
Cover and refrigerate pie at least 4 hours before serving. Top with lemon or orange slices.
Makes 8 servings.
