  • Mix together the following ingredients, rub the ribs, and refrigerate for 24 hours.
  • 1 tbs ground black pepper. 2 tsp. cayenne pepper
  • 2 tbs chili powder 2tbs ground cumin
  • 2 tbs packed dark brown sugar 1tbs white sugar
  • 1 tbs ground oregano 4tbs paprika
  • 2 tbs salt 1tbs white pepper
  • 3 tbs celery salt 3tbs garlic powder
  • Makes enough for 4 slabs.

Directions

Instructions

Use hickory chips for smoke. Soak in water for 1 hour

Light fire right or left side of barbecue. Medium heat.

Place smoker under grate over flame.

Place ribs on opposite side of fire.

Cook two hours turning ribs every 30 minutes.

Remove ribs ,wrap in foil, then place in paper bag for one hour.

Serve with barbecue sauce on the side, if desired
