If tortillas are not used while still warm, or you are using frozen ones, they should be heated over flame in order to soften them and make them pliable.

Ingredients

  • tortillas
  • cheese
  • salsa
  • cooked meat

Directions

Take fresh tortillas, place a generous piece of Monterey, Cheddar, or American cheese, a teaspoon of salsa Jalapena, a piece of peeled green chile or your favorite chile relish on each tortilla. Fold over as you would a turnover, and pin top with toothpicks to hold together. Fry or grill them in buttered skillet to desired crispness, turning often. Make sure the cheese is melted. Pieces of cooked chicken or turkey, or of leftover meats may be used for filling the quesadillas. They are also good with vegetables, tuna, or shrimp. They may be served for lunch, brunch, or snacks. They may be filled ahead of time and reilled when ready to serve. Delicious served with refried beans.
