Classic Rice Pudding Recipe

Ingredients:

  • 1/3 cup uncooked Uncle Ben's Converted Brand Rice
  • 1 1/2 cups water
  • 1/3 cup sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1 1/3 cups milk
  • 1 tablespoon butter or margarine
  • 1/2 teaspoon vanilla*
  • 2 egg yolks, beaten
  • Cinnamon and or raisins, optional**

Directions:
Combine rice and water in medium saucepan. Bring to a boil. Reduce heat, cover and simmer 25 minutes, or until rice is very tender and most of water is absorbed. Combine sugar, cornstarch and salt. Add milk and sugar mixture to rice. Heat to boiling; boil 1 minute, stirring constantly. Remove from heat. Stir in butter and vanilla. Slowly stir about 1 cup of hot rice mixture into the beaten yolks in a bowl. Blend with remaining mixture in saucepan. Cook over medium heat, stirring frequently, just until mixture stars to bubble. Serve warm or chilled, plain or with cinnamon and/or raisins.



*I increase vanilla to 1 teaspoon. **I add about 1/2 cup raisins when I add the milk and sugar mixture and sprinkle the top of each serving with cinnamon. A wonderful rice pudding and you don't have to heat up your kitchen using the oven!
