Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 2 eggs, slightly beaten
  • 1 cup milk
  • 8 tablespoons (1 stick or 1/2 cup) butter, melted
  • 1 teaspoon vanilla extract

Directions

Preheat oven to 400 degrees. Grease muffin tins or line them with paper baking cups.

Stir and toss together the flour, baking powder, and salt until completely mixed. Place the sugar, eggs, milk, butter and vanilla in a large bowl; mix well. Add the combined dry ingredients and beat, just until the batter is blended; it should not be completely smooth.

Spoon the batter into the prepared muffin pans, filling each cup about 2/3 full. Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean. 12 muffins.

(If you add wet ingredients, mashed fruit etc., adjust the amount of milk accordingly. If you like, sprinkle the tops with cinnamon and sugar before baking.)
