Wilted Spinach Salad Recipe

Ingredients:

  • 1 lb. fresh spinach
  • 4 slices bacon
  • 3 T. finely chopped onion
  • 1/3 C. white vinegar
  • 1/3 C. water
  • 1 (2 oz. ) jar diced pimento, drained
  • 2 T. sugar

Directions:
Remove stems from spinach; wash leaves thoroughly & pat dry. Tear into bite-size pieces, place in large bowl.

Cook bacon in large skillet until crisp; drain reserve drippings. Crumble bacon, set aside. Saute onion in bacon drippings. Add vinegar & last 3 ingredients; bring to a boil. Pour over spinach, tossing gently. Sprinkle with bacon & serve.
