Ingredients

  • 2 cups chopped dates
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups boiling water
  • 3 eggs, well beaten
  • 1 1/2 cups brown sugar
  • 1/2 cup margarine or butter, softened
  • 3 cups flour
  • 1 - 1 1/2 cups coarsely chopped nuts

Directions

Preheat oven to 350 degrees. Grease and flour two 9x5x3-inch loaf pans. In large bowl, combine dates, baking soda and salt. Pour boiling water over mixture. Set aside to cool. Combine eggs, sugar and butter; beat until light and fluffy. Gradually add flour, mixing well. Stir in date mixture and nuts; stir to combine. Divide between prepared pans. Bake for 1 hour or until done. (Test with a toothpick after 50 minutes.) Cool in pans for 5 minutes before turning out on racks. Freezes well.
