Ingredients

  • 1 pound filo
  • 3 eggs
  • 1/2 pound feta cheese
  • 1/2 pound cottage cheese, small curd
  • 2 tablespoons finely minced fresh parsley
  • Pepper, to taste
  • 3/4 pound butter, melted

Directions

Thaw filo dough overnight in refrigerator in it's carton. Beat eggs slightly; beat in feta, cottage cheese, parsley and pepper. Mixture will not be completely smooth. As you are working with the filo, keep all but the sheet you are using covered with the plastic that comes in the package and a slightly dampened kitchen towel. Cut first sheet of filo into 2 1/2 inch strips. Brush with melted butter. Place about 1 tablespoon filling on one end of the strip and fold corner over to make a triangle. Continue folding from side to side until the strip is all folded. (Like folding a flag.) Brush triangle with more melted butter; place on buttered baking sheet. Continue until all filling and filo are used.

Bake at 350 degrees for 20 - 25 minutes or until golden brown. Refrigerate any leftovers. They can be reheated at 350 degrees until they crisp up again. (Makes a bunch!)
