Ingredients

  • 1 lb. pork pieces
  • 1 large can pineapple chunks
  • 1/2 cup vinegar
  • 1/2 cup brown sugar
  • Diced carrots(optional)
  • 2 green peppers, diced
  • 2 medium onions, diced
  • 2 Tbsp. soy sauce
  • 1-2 Tbsp. cornstarch

Directions

Brown pork; saute onions and peppers. Add pineapple and juice with the rest of the ingredients and simmer 1 hour, stirring occasionally. Serve over rice.
