Ingredients

  • 1 1/4 cup rolled oats
  • 1 cup buttermilk
  • 1/2 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup raisins
  • 1 Tablespoon grated orange peel
  • 1 egg
  • 3/4 cup firmly packed brown sugar
  • 1/4 cup corn oil
  • 3/4 cup orange juice
  • 1 teaspoon vanilla extract

Directions

In a medium bowl, combine oats and buttermilk. Let stand 5 to 10 minutes. Set aside.

Preheat oven to 375. Spray muffin pan with a non-stick spray. Set aside.

In another medium bowl, combine flours, baking powder, baking soda, raisins and orange peel. Mix well.

In a large bowl beat egg lightly. Stir in brown sugar, oil, orange juice and vanilla. Blend well. Stir in oats mixture. Add flour mixture and gently fold together until dry ingredients are moistened.

Fill muffin cups 3/4 full. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Serve warm.
