Ingredients

  • 1 medium onion, chopped
  • 1 medium green pepper, seeded and chopped
  • 1/4 cup peanut oil
  • 1 1/2 pounds ground beef
  • 3 cloves garlic, minced
  • 1 (16 ounce) can whole tomatoes, drained and chopped
  • 1/2 cup tomato sauce
  • 1 Hawaiian chili pepper, seeded and minced (substitute jalepeno)
  • 1/2 teaspoon thyme
  • Salt and pepper
  • 4 papayas (about 1 pound each) cut in half and seeded
  • Salt and pepper
  • 1/2 - 3/4 cup grated Parmesan cheese

Directions

Preheat oven to 350 degrees. Saute onion and green pepper in oil in a large skillet until onion is translucent. Add beef and garlic, breaking up meat and cooking until browned. Add tomatoes, tomato sauce, pepper and thyme; season to taste with salt and pepper. Reduce heat and simmer for 10 minutes or until most of the liquid evaporates. Place papaya in a 9 x 13-inch baking dish and sprinkle lightly with salt and pepper. Spoon beef mixture into papaya halves. Pour hot water into baking dish to a depth of 1 inch. Bake until papaya is tender, about 50 minutes. Sprinkle with cheese and bake for 15 minutes.
