Fritter (Tempura) Batter Recipe

Ingredients:

  • Enough to coat about 2 cups food.
  • 2 eggs
  • 1 1/3 cups(316 ml) all-purpose flour or rice flour
  • 1 tsp.(5 ml) salt
  • 1/4 tsp.(1.2ml)freshly ground white pepper
  • 1 tbsp.(15ml) sweet butter, melted
  • 3/4 cup(177ml)flat beer

Directions:
1. Separate egg yolks; yolks in cup and whites in a large bowl. Cover and reserve whites. Beat yolks with fork.

2. In a mixing bowl, combine flour, salt, pepper, butter and egg yolks. Mix well.

3. Gradually add beer to flour mixture. 4. Allow batter to rest, covered and refrigerated overnight (at least 3 hours). Just before using, beat egg whites until stiff, but not dry, and fold them into batter.
