Ingredients

  • About 1/2 lb. chicken livers
  • 1/4 c. soy sauce
  • 1 1/2 tbsp dry white wine
  • 2 cloves garlic, minced
  • 1/8 tsp ground ginger
  • 6 oz. can water chestnuts, drained
  • 12 slices bacon, cut into thirds

Directions

Cut livers in about 1 inch pieces. Combine soy sauce, wine, garlic, and ginger in bowl or bag, add livers and stir well. Cover and marinate in refrigerator 2 to 3 hours.

Cut chestnuts in half. Place a half and a piece of liver on each piece of bacon. Roll up and secure with wooden pick. Arrange on paper-towel lined glass pizza plate or microwave-safe platter, placing no more than a dozen at a time. Cover and refrigerate up to 2 hours.

When ready to microwave, cover plate with paper towel. Microwave each plate on HI for 4 1/2 to 7 minutes or till bacon is crisp and liver is done, giving dish one half-turn.


Makes about 3 dozen. Note: This may be done without final chilling. Micro waving time will not be changed.
