Ingredients

  • 2 cups flour
  • 2 Tablespoons cocoa
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups chocolate chips (divided use)
  • 2/3 cup milk
  • 1 cup applesauce
  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 2 egg whites, lightly beaten
  • 2 Tablespoons oil
  • 2 teaspoons vanilla
  • Confectioners' sugar

Directions

Preheat oven to 400 F. Combine flour, cocoa, baking powder, baking soda and salt in a medium bowl. Combine 1 cup chocolate chips, milk and applesauce in a large, microwave-safe bowl. Microwave on High for 1&1/2 minutes or until morsels are melted, stirring every 30 seconds. Remove from microwave. Stir in brown sugar. Stir in granulated sugar, egg whites, oil, vanilla and remaining chocolate chips. Stir in flour just until moistened; the batter will be lumpy.
Line muffin pans with paper liners; spray lightly with nonstick cooking spray. Spoon batter into cups until almost full. Bake 18-20 minutes or until wooden pick inserted incenter comes out clean. Let stand for 5 minutes. Remover from pan. Sprinkle with confectioners' sugar.
