Fat-Free Baba Ghanoush Recipe | ||

| Ingredients:
2 med eggplants
2 tbsp lime or lemon juice 3-5 cloves crushed garlic (to taste) 1/4 tsp cumin salt to taste
Directions:
Pierce the eggplants and roast, whole, in a 350 oven until they collapse and the skins are turning crispy. Scoop out the eggplant flesh into a blender. Add remaining ingredients except salt. Puree until completely smooth and fluffy. taste, add salt and blend again until you like it. Note: If you want to add about a tablespoon or two of olive oil, it will make it even smoother (although of course it won't be fat free any more). Baba Ghanoush is usually served as a dip, cold, with pita bread (like you would serve humus or tzatziki). It also works well as a sauce over steamed veggies like carrots, zucchini, or broccoli.
