Ingredients
- 1 1/2 lb. fish
- 1/2 lb. raw shrimp
- 1 large Dungeness crab
- 12 clams
- 1/2 c. olive oil
- 1 tsp minced garlic
- 1 c. chopped onion
- 1 c. chopped green onions
- 1/2 c. minced green pepper
- 1 (8 oz) can tomato sauce
- 3 1/2 c. (1 lb. 13 oz.) can tomatoes
- 2 c. red wine
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp dried oregano
- 1/4 tsp dried basil
- Parsley
- Hot Garlic Bread
Directions
Use a firm fleshed fish, like bass, rockfish or even shark. Cut in good-size pieces. Shell and clean shrimp, clean and crack crab, scrub clams. If there are no clams, use mussels, cockles or oysters. To make sauce; heat olive oil, next 11 ingredients, and 1/2 c. parsley together, simmer 5 minutes. Now arrange the fish, shrimp and crabs in layers in a 3 quart kettle or casserole. Pour on the sauce, cover and simmer over low heat or bake in preheated slow oven (300) for 30 minut4es, or till fish is done. Add the clams and as soon as they open up, sprinkle with more chopped parsley and serve with lots of hot garlic bread. Bibs are almost a necessity!
