Ingredients

  • 2 Whole arctic char (each about 2 lb / 1 kg) - heads left on or removed
  • Roasted garlic-flavoured olive oil
  • 1 cup chopped fresh oregano
  • 4 cloves garlic, fiely chopped
  • 1/4 cup lime juice
  • salt and freshly ground pepper
  • Fresh oregano and lime slices for garnish

Directions

Wipe fish with damp cloth and pat dry. Cut three shallow diagonal slashes into both sides of each fish so that the marinade can penetrate the flesh. Rub fish all over with olive oil. Mix together oregano and chopped garlic. Pat oregano-garlic mixture all over each fish; place a generous amount in cavities.

Place fish in shallow dish; cover and let marinate for 30 minutes. While grill is heating, sprinkle fish and herb mixture with lime juice. Season with salt and pepper to taste. Place fish in grill basket and cook over medium heat until fish is opaque all the way through or slightly translucent in the center, about 5 to 7 minutes per side. Arrange fish on platter. Garnish with lime slices and fresh herbs.
