Sweet Potato Salad Recipe

Ingredients:
8 large sw. potatoes (5 lbs)
4 Grany Smith apples
4 green onions
Poppy Seed Dressing:
1/2 c. orange juice
2 tbsp white wine vinegar
2 tbsp Dijon mustard
2 tbsp minced onion
2 tbsp grated orange rind
1 tbsp grated lemon rind
1 c. olive oil
1 tbsp poppy seeds

Directions:
Cook sweet potatoes in boiling water to cover, 25 to 30 minutes or till tender; drain and cool. Peel potatoes and cut into 1/2 inch thick slices. Cut apples into thin wedges; slice green onions. Arrange 1/4 potato slices, apple wedges and green onions in large salad bowl; drizzle with 1/4 Poppy Seed Dressing. Repeat layers 3 times with remaining ingredients; cover and chill.
