Double Chocolate Chunk Biscotti Recipe

Ingredients:

  • 1/3 c butter or margarine
  • 2/3 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 4 oz. white chocolate baking squares, coarsely chopped
  • 3 oz. semi-sweet chocolate

Directions:
Lightly grease a cookie sheet and set aside. Beat butter with an electric mixer in medium speed for 30 seconds. Add sugar, cocoa powder and beat until combined. Beat in eggs. Beat in as much flour as you can. Stir in remaining flour. Stir in white chocolate and semi-sweet chocolate.

Shape dough into 2 9-inch long rolls. Place on prepared cookie sheet and flatten slightly. Bake at 375 degrees F for 20-25 minutes. Cool on sheet for 1 hour.

Cut each roll diagonally into 1/2- inch thick slices and place on an ungreased cookie sheet. Bake at 325 degrees F for 8 minutes. Turn and bake for 7 to 9 minutes more or until crisp. Cool on wire rack.

Makes 32.
