Ingredients:

  • 3 cups mozzarella cheese
  • 3 cups mashed potatos
  • 1 large jar or can of saurkraut
  • 1 box of lasagna noodles (cooked)
  • 1 cup seasoned bread crumbs
  • 1 large onion, chopped
  • 1/2 cup butter

Directions:
Melt butter in skillet and add chopped onion. Cook until done. In a large casserole dish, place 3 lasagna noodles on bottom. Over these, spread 1 cup mashed potatos then add 1/3 of butter/onion mix. Sprinkle some cheese on top. Then layer 3 more lasagna noodles. Spread 1/3 saurkraut over and add 1/3 of the seasoned bread crumbs. Add more cheese.
Repeat the layering process until top of casserol dish. End with cheese on top. Cook at 350 degrees for 25 minutes or until cheese is melted and all is hot.
