• 3 green onions minced
  • 1 rib celery finely diced
  • 4 tblspns butter
  • 1 cup chopped spinach
  • 2 tblspns fine dry breadcrumbs
  • Dash tabasco
  • 1/4 tspn Worcestershire sauce
  • 4 oz butter, softened
  • 2 strips bacon, fried crisp and crumbled
  • salt to taste
  • 24 fresh oysters on half shell


Preheat oven to 450F. Saute onions and celery in butter until tender. Add chopped spinach and cook 1 minute; remove from heat. Add bread crumbs, sauces and salt. Blend with softened butter and bacon. In shallow baking pan put enough rock salt or foil to keep oysters from tipping. Arrange oysters in pan and top each with about 1 tspn of saute mix. Bake 5-10 mins until hot and bubbly.
