Ingredients

  • 4 large baking potatoes
  • 1/2 cup low fat sour cream
  • 1/4 margarine or butter
  • 1/2 cup freshly grated Parmasean
  • 1 tsp. Garlic Salt (or to taste)
  • Dash of Nutmeg (to taste)
  • Dash of Cayenne (to taste)

Directions

Bake potatoes in 400 degree oven for about an hour. While potatoes are still hot, cut a large oval opening in the top of each potato. Scoop out the inside of the potatoes (and the piece you cut) into a mixing bowl. Be sure to leave enough potato in the shell so it remains stable. Return the shells to the oven (in a baking pan) for about 10 minutes. Microwave or heat the sour cream and butter, and add to the potatoes in the mixing bowl. Mix with a mixer until smooth, adding the remaining ingredients. Taste and adjust seasonings. Fill the potato skin shells with the mashed potato mixture. Bake in a baking pan in a 350 degree oven for about a half hour. Sprinkle with chopped chives or cayenne pepper.
