Cranberry Orange Bread Recipe

Ingredients:

  • 8 oz Mafalda (mini lasagne)
  • 1 lb. lean bee, 1 inch cubes
  • 1/2 large onion, chopped
  • 2 carrots, peeled and sliced 3/4 inch
  • 1/2 sw. red pepper, cut in 1/2 inch strips
  • 8 oz. sm fresh mushrooms
  • 2 tomatoes, cut into wedges
  • 1 c. red wine
  • 1 bay leaf
  • 1/4 c. chopped fresh parsley
  • 1/4 tsp hot red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 c. frozen peas, thawed

Directions:
In large heavy pot, combine beef, onion, carrots, red pepper, mushrooms, tomatoes, wine, bay leaf, parsley and red pepper flakes. Cover and simmer over low heat for 1 1/2 hours, stirring occasionally. Stir in salt, black pepper and pasta. Cover and cook 10 minutes, stirring occasionally. Add peas and stir to mix. Serve hot.
