Gyros Meat Loaf Recipe

Ingredients:

  • 1 1/2 pound ground lean lamb
  • 1 pound lean ground beef
  • 1 8-ounce can tomato sauce
  • 1 cup minced onion
  • 2 cloves finely chopped garlic
  • 1/2 cup dry bread crumbs
  • 2 large eggs, slightly beaten
  • 1/8 cup finely chopped mint leaves or 1 tablespoon
  • dried mint, crumbled
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil, crumbled
  • 1 1/2 teaspoons dried oregano, crumbled
  • 1 teaspoon salt

Directions:
Put lamb, beef, tomato sauce, onion, garlic, bread crumbs, and eggs in food processor with steel blade. Process until meat is ground very finely. Turn out into bowl and mix in remaining ingredients, using your hands.

Spray a 9 x 5 inch loaf pan with non-stick spray. Pack very firmly into prepared pan. Bake at 350 degrees for 1 1/2 hours. Let cool for about 20 minutes in pan before turning out. This slices best if made the day before, wrapped and refrigerated. Slice and reheat in microwave. Make into sandwiches in pita bread, adding cucumber sauce, tomatoes and if desired, sliced onions.



This will still not be as compact a loaf as the commercial kind.
