• 1 to 1 1/2 c. shredded pork or ham
  • 2 tbsp chopped water chestnuts or mushrooms
  • 2 tbsp chopped green onions
  • 3 c. cooked rice
  • 2 eggs, beaten
  • 1 tbsp soy sauce


Cook the meat, water chestnuts and/or onion in 2 tbsp cooking oil. Stir in 3 c. rice, brown lightly, then add 2 beaten eggs and 1 tbsp soy sauce. Cook, stirring, until the eggs are cooked. Serve with more chopped green onion sprinkled on top.

About 6 servings.
