Ingredients
- 1 to 1 1/2 c. shredded pork or ham
 - 2 tbsp chopped water chestnuts or mushrooms
 - 2 tbsp chopped green onions
 - 3 c. cooked rice
 - 2 eggs, beaten
 - 1 tbsp soy sauce
 
Directions
Cook the meat, water chestnuts and/or onion in 2 tbsp cooking oil. Stir in 3 c. rice, brown lightly, then add 2 beaten eggs and 1 tbsp soy sauce. Cook, stirring, until the eggs are cooked. Serve with more chopped green onion sprinkled on top.
