No-Cook Tomato Sauce Recipe

Ingredients:
  • 2 lbs. ripe tomatoes(about 6 medium), cut into 1/2-inch pieces
  • 1/2 lb. fresh mozzarella cheese, cut into 1/2-inch pieces
  • 1 cup packed fresh basil leaves, cut into strips
  • 2 T olive oil
  • 1 T red wine vinegar
  • 1 tsp. salt
  • 1/4 tsp coarsely ground black pepper

Directions:
n medium bowl, combine tomatoes with their juice, mozzarella, basil, olive oil, vinegar, salt, and pepper, stirring gently to mix well. Allow sauce to stand at room temperature at least 15 minutes or up to 1 hour to develop flavor. Makes about 7 cups.

Each cup: About 150 calories, 8 g protein, 8 g carbohydrate, 12 g total fat(4 saturated), 26 mg cholesterol, 340 mg sodium.
