Applelsauce spice cake Recipe | ||

| Ingredients:
1 stick margarine (softened)
2 cups sugar 1 egg 1 can applesauce (or 1 1/2 cups) 1 Tbsp. cinnamon 1/4 tsp. ground cloves 1/4 tsp. ground allspice 2 Tbsp. soda 1/2 tsp. salt 1/2 cup boiling water 1 Tbsp. vanilla 1 Tbsp. black walnut flavoring 3 1/2 cups all purpose flour 1/2 cup raisins 1/2 cup walnuts
Directions:
In a large bowl cream together the margarine and the sugar. Add egg, applesauce,salt, and the spices, mix well. Add 1/2 of the flour (do not mix), add the nuts and the raisins, then add the rest of the flour. Mix well. Separately mix the boiling water and the soda. When dissolved, add to the batter and mix well. Pour into a prepared bunt pan and bake at 350 for 1 hour or until a toothpick comes out clean. This makes a very stiff batter. This cake freezes very well.
