I've only seen 1 recipe, which is where I got this, that has the ingredients that Chipotle lists on their web site for their carnitas.

Ingredients

  • 1 pound of pork shoulder (as an alternative, I use boneless country style ribs)
  • little bit of oil, maybe 2 tablespoons...
  • 1 bay leaf
  • cracked black pepper
  • 3 sprigs of thyme
  • 12 juniper berries
  • full fat, packed with sodium, chicken stock

Directions

Do this before you start cooking the pork.

Crush the juniper berries on a small plate with the back of a spoon. You'll instantly notice that great smell...GIN! Yes, that what good gin is made from.

Put the little bit of oil in a pot that will hold your pork.

Fire up that bad boy to a temperature that will sear the outside of the pork.

Season the outside of the pork with that cracked black pepper and then put it in the pot. Brown all sides the best you can.

After that's done, thrown in the bay leaf, thyme and the juniper berries.

Add chicken stock 1/2 way up the pork. Bring to a boil and then set to simmer and prepare to wait.

Turn the pork over every 15 minutes and cook for about 2 hours.

The juice will thicken up and once it's done, falling apart I mean, take out the bay leaf and the thyme twigs.

Using the back of a spoon, press on the pork til it gets to a shredded state while swirling it around in that delightful liquid!

You're done. Enjoy any way you want!

What will surprise you is how good this tastes with just 6 simple ingredients!
