Ingredients

  • 2 T green onions, chopped
  • 1 t fresh thyme
  • 1 t salt
  • 1/4 t allspice
  • pinch each of nutmeg and cinnamon
  • 2 t hot pepper sauce
  • 1 t sugar
  • 11/2 lb pork tenderloin

Directions

Mix all ingredients except the tenderloin.

Smear the rub over the tenderloin. Roast covered 30 to 45 minutes or until 150 to 160 on a meat thermometer.

This simple recipe always produces rave results.
